I love bok choy, and as I have said many times before I love chinese food. This dish is really delicious with lots of fried garlic and oystersauce. If you don`t find or want to use bok choy green beans or broccoli works as well.
Bok choy with oystersauce and garlic
2 servings
6 baby bok choy
1 tbsp oyster sauce
1 tbsp water
1/2 tsp oil
1/2 tsp granulated sugar
1/4 tsp white pepper
-----------------------
2 cloves garlic, finely chopped
1 tsp oil
-----------------------
Make the garlic oil first.  Heat oil and garlic in a wok. Stir fry until the garlic  turn light brown. (not burned)
Pour into a little dish and set aside.

Heat up a large saucepan of water and bring to boil. Add  a couple of drops of oil. Add the bok choy and  blanche them for about 1-2 minutes (depending on size and quantity). When they turn wilted and stalks are a little tender,  remove and drain off excess water.
Heat up oil in a wok and add oyster sauce, water, sugar, and white pepper. Boil for 30 sec until it thickens a little. Arrange the bok choy on a serving dish, spoon over the oyster sauce then the garlic oil and roasted garlic.
Serve immediately.
