Baked cod with garlic butter

I serve fish for dinner quite often now a days. Mostly fried or baked.  Here I baked the fish with garlic, herbs and parma ham and butter. Delicious. I served mash and vegetables as sides. 
Baked cod with garlic butter
2 servings
1/4 cup butter, softened
1 1/2 tbsp chopped flat-leaf parsley
1 large garlic clove, minced
2 tsp minced onion
1/2 tsp Dijon mustard
1 1/2 tbsp prosciutto di Parma, finely chopped
1 tbsp lemon juice
Salt and freshly ground pepper
2 tbsp olive oil
2 (7-ounce) skinless thick cod fillets
1/2 lemon, in wedges
Whisk butter smooth in a small bowl. Then add parsley, garlic, onion, Dijon, parma, lemon juice, salt and pepper. Stir until well combined. Set aside. Preheat oven to 450 F.
Heat olive oil in a  ovenproof skillet over medium-high heat. Season the cod  with salt and pepper, and fry for 2 minutes on each side. Spoon 1 tablespoon butter mixture over the top of each fillet. Transfer skillet to the oven, and bake for 2 minutes or until fish is just cooked through and opaque in the center. Add any remaining butter to pan, and let melt, stirring with juices in pan. Spoon over fish, and garnish with lemon wedges.
