A lovely fish dish. Simple, easy to make but with great flavours. Do not overbake the fish. It often takes shorter time to cook than you would think. I have a lot of fresh herbs in my small herb garden.  Too much to use so I freeze  some of them. I used freezed ones here, that is why the color is not as vibrant as with fresh herbs.
Baked cod with chili lime sauce
2 servings
1 lbs fresh cod fish fillets
1/2 red chili, deseeded and finely chopped
1 tbsp fresh parsley, chopped
1 tbsp chive
1 tsp thyme leaves
1 spring onion, sliced
1/2 tsp sea salt
3 tbsp butter
1/2 tsp cumin
1 lime, juice
Heat oven to 450°F.
Coat a oven proof pan with a little butter. Season the fish with salt and pepper.
Place the fish in the pan ond roast in the oven for 7-9 minutes, depending of the thickness.
Meanwhile, melt butter in small saucepan. Add cumin, chili, herbs and spring onion. Then squeeze
in the lime juice. Cook for 1 minute. Before serving drizzle sauce over the fish and serve with new potatoes
and vegetables.
