A simple and tasteful way to serve fish. I always make garlic mash potatoes to serve with it.
Baked cod with bacon and zucchini
2 servings
4 small fillets of cod (or other white fish)
4 oz bacon
1/2 cup fresh breadcrumbs or panko
3 tbsp butter
2 tbsp chives
Salt and pepper
1 large zucchini
Preheat oven to 400 F
Slice bacon into small pieces and fry in a fryingpan until crisp. Drain on a paper towel.
If you use frozen fish, thaw and pat dry with a paper towel. Season with salt and pepper.
Melt butter in a little saucepan or in the microwawe.
In a small bowl mix together breadcrumbs, salt, pepper and melted butter.
Then add bacon and chives and mix well.
Cut zucchini into 4 slices. Fry the slices in frying pan with a little butter for a couple of minutes on high heat.
Place the slices in a baking dish, then fish fillets on top and spoon over bacon crumble.
Bake for 12-15 min (depending on the thickness) until firm and topping is crisp. .
