Delicious oatmeal baked in the oven with mashed banana and fresh raspberries. This is my daughters favorite weekend breakfast.
Baked banana oatmeal
1 serving
1/3 cup rolled oats (quick is fine)
1 tsp brown sugar (optional)
1/4 tsp ground cinnamon
1/2 tsp baking powder
good pinch of salt
1/3 cup milk (skim milk is ok)
1/2 ripe banana, mashed
1 egg white
Fresh raspberries to serve
Preheat oven to 400°F. Lightly grease two small ovenproof ramekins.
In a small mixing bowl, whisk together oat, (sugar), cinnamon, baking powder, and salt.
In another bowl whisk together milk, mashed banana and egg white.
Pour dry ingredients into wet and stir until combined. Pour the mixture into the prepared ramekins. Bake for 20 minutes, or until oatmeal is puffed and set.
