A crispy and tasty asian coleslaw with a peaut dressing.
Asian style coleslaw
3 servings
1/2 napa cabbage, shredded
3 carrots, roughly grated
1 cup sugar snaps, thinely sliced
1/2 cup radish, thinley sliced
1 red chili, deseeded and sliced
2 spring onion, sliced
1/2 pomegranate, seeds
A handful chopped cilantro
A handfull salted peanuts ( optional)
Peanut dressing
1/2 cup peanutbutter
1/3 cup rice wine vinegar
1 lime, juice
1 tbsp fresh grated ginger
1 1/2 tbsp soy sauce
Whisk all the ingredients together.
